Native Cooking Award
The Native Cooking Award is an international competition for Michelin Chefs, where people interested in gastronomy can observe the chefs from different countries compete for the title.
The Native Cooking Award is the biggest international chefs competition in Denmark and as such a competition where different nations compete in the arts of gastronomy. The competition takes its point of departure in the local terroir of Lolland.
Each team consists of 4 chefs who have to have experience as atleast a sous chef in a Michelin star restaurant or a restaurant of equal quality.
Knuthenlund has as the only place in Denmark had a survey done, in order to map out the local eatable berries and herbs. This has resulted in a report and GPS mapping of these. At the beginning of the competition, all teams will be handed the GPS-coordinates as well as a bike, these they have to use in order to find their way to the ingredients of their choice in the lush nature around Knuthenlund. In addition to the hers, the teams will have meat and dairy products from Knuthenlund at their disposal, as well as other products from local producers. All of the local products will be available for purchase at their individual stall at the event.
In order to highlight the nature and the role it plays in the production of the goods, the competition is held outdoors. After gathering the ingredients, the chefs will prepare a 3-course menu over an open barbeque. The only outside ingredient allowed in the dishes is salt.
